November Goals: EAT

No sooner did I post the November Goals, that I had an immediate hankering for the Slow Cooker Quinoa Chicken Chili. It was probably the easiest thing I’ve ever made and I did not adjust the recipe much at all. Here are the very simple instructions:

Rinse a cup of quinoa. I did not think it was going to be enough, but it is. Trust.

Dump the following into a crock pot:

1 can of crushed tomatoes

1 can of Rotel (I used the kind with Habanero because I like it SPICY)

2 cans of black beans

1 can of corn

1 tsp each of: cayenne, salt, black pepper, cumin, paprika

1 cup of water

2 chicken breasts

rinsed quinoa

Set that sucker on low and let it go for about 6 hours. Shred the chicken and mix well and let it go another hour or so. Dunzo! Easy and delicious.
